Keto Chicken Pizza Crust

I am so excited to announce that I have officially lost 30 pounds but it took hard work and dedication. I’ve got a good bit more to go to get to that fit healthy place I wanna be but y’all I am so excited! I know I’ve been silent for a few weeks and I wanna let ya know life happens! Samuel has been sick, work has been hectic and home has been chaos but things are starting to even out a bit and I’ve got a lot of fun stuff to work on! I can’t wait to share it all with y’all!  

So this whole Keto diet thing, I thought hey I’ll give it a fair shot and along with exercise and a physicians guidance it’s been pretty successful. I’m not going to be one of those who just goes to the Keto diet and never looks back, I’m just using it to get started. The worst part y’all NO CARBS that means NO PIZZA!!! that’s our favorite! We were devastated! Thankfully I after much experimenting found a carbless crust that is still delicious (I still have to pass on the tomato sauce but hey I’ve almost got pizza) 


(makes 2 personal thin crusts)

Preheat oven to 400 degrees 

1 can white meat chicken breast
1/2 cup Parmesan cheese
1/2 cup mozzarella cheese
1 egg
Olive oil (to grease pan)

Add your chicken Parmesan mozzarella and egg in the mixer until well blended. Grease cookie sheet with olive oil. Half mixture. You can refrigerate or bake right away. Bake at 400 for 10 minutes or until golden (they almost look omelet like). Add toppings for pizza and cook until toppings are done! I made a double batch and cooked all 4 crusts and put 2 cooked crusts in the fridge, all I had to do was add the toppings and melt the cheese! 

This crust does look a bit different during the cooking process so the following photos are so that you can see that yes it does look a little strange.

(I used a cake pan to make mine round, you can use whatever pan you want just make sure that you spray it good)

(This is what it looks like after cooking, almost an omelet look)

(I transferred mine to a cookie sheet since I was baking two and decorated it to perfection)

(then bake until your cheese and topping are done!)

Super easy! (Secret my husband ate it and loved it!)
