Very Berry Gypsy Muffins

I think my favorite meal of the day is breakfast! I love bacon, eggs, biscuits, & muffins. So this morning I decided to whip up some of my favorite muffins and then as I was enjoying how perfectly sweet and delicious they were I realized I can not keep this recipe to myself! So y’all here it is the beat muffins you’ll ever make!

Very Berry Gypsy Muffins

Makes about 16 muffins

3 cups self rising flour
1 1/4 cup milk
2 large eggs
2 sticks unsalted butter
1 cup blueberries
1 cup diced strawberries
1 1/2 cup sugar

Preheat oven to 375 degrees.
Spray muffin tin with nonstick cooking spray or line with paper liners.

Combine milk, eggs, and melted butter. Add flour slowly and mix well. There will be a few lumps don’t over mix. Add fruit and sugar stirring gently.

Using a large spoon add batter to the muffin tin, filling 3/4 full. Bake for 20 to 25 minutes until golden brown. Let them cool, and serve them with a nice fresh cup of coffee or cold milk!
