Microwave Chicken Alfredo

Calling all college students, singles, couples, and busy mamas this ones for you! Who doesn’t love a quick meal? Who doesn’t love a meal you make in only one dish? Who doesn’t love a meal you make quick in only one dish in the microwave? I really hope no one places their name after any of those questions. If so this isn’t the recipe for you, but if you love quick, easy, one dish microwave meals then you’ve got to try this out y’all!

What you need:

Box of noodles (we used rotini but you can use any you’d like)
A large microwave safe bowl
Alfredo sauce (Classico is the closest I’ve found to my homemade)
1 can of Chicken Breast 
Spicy pepper seasoning (optional)

So microwaving noodles is a fine art. Cook them too long and they are too rubberlike, not long enough and they are crunchy, but at just the right amount of time they are soft and perfect! So I suggest following this part pretty closely.

Add 5 cups of water to a large microwave safe bowl, place in microwave and heat on high for 5 minutes. Carefully add pasta (3 cups was enough to feed our family of  two and a half), add a pinch 
of salt and give a swift stir. Return to microwave another 5 minutes on high. Carefully remove and drain pasta it will be very very hot. 
Add your Alfredo sauce and chicken (drain first) to your bowl and pour the warm pasta over top. Add extra cheese and spicy pepper seasoning now, microwave 1 minute on high. Carefully remove and serve with a glass of cold southern sweet iced tea!
