Small Batch Homemade Chocolate Chip Cookies (optional meringue)



Y’all this fall has been so much fun! It’s been filled with baking, learning, photography, and best of all I have gotten to completely focus on being a mom and wife! I can think of no better way to spend the last few weeks! Me and little man have been baking up a storm and the other day we really wanted cookies but everything was dirty and we wanted them now, so I came up with this fabulous small batch of homemade chocolate chip cookies and it only took one bowl and the hand mixer!

These are so good! Have you ever had meringue on top of a chocolate chip cookie? Neither had I but let me say it is so yummy! I got the idea because my cookie recipe only calls for egg yokes so after I separated my eggs and mixed up my cookie batter I just couldn’t throw those egg whites away, and from that I founded a new family favorite!

Makes 6 Cookies
Cook Time 10 minutes 

What you need:

Cookie sheet
One small/medium bowl
One mixer (I used a hand mixer)

1/2 stick of butter
1/4 cup of granulated sugar
2 Tablespoons of brown sugar
1 large egg yoke (save the whites)
3/4 teaspoon of vanilla extract
1/2 cup slightly overfilled self rising flour
1/3 cup chocolate chips



Preheat your oven to 350 degrees. 

In your small bowl melt your butter, while it’s still warm but not overly hot mix in the sugars. Make sure the sugars and butter are well blended then add the egg yoke and vanilla extract, mix well. Slowly add flour. Once all flour is added take a spoon or spatula and mix in your chocolate chips. Roll out cookies, it should make 6 good sized cookies. Place in oven and bake about 10 minutes. 



While cookies are baking place egg whites into a clean small bowl with about a Tablespoon of sugar. Using mixer beat until a nice firm peaked meringue is formed. 



After cookies are done place a nice scoop of meringue on top and return to the oven on a Lo broil until meringue is lightly toasted. Do not leave unattended They will burn quickly.



Now sit back grab a nice hot cup of coffee and enjoy your quick little treat!
